It also tastes delicious on a slice of rustic bread, as a pizza topping, in lasagnas or together with a bowl of mixed fruit. The mild and natural milky flavour makes this cheese a household favorite, especially for breakfast! Homecoming tastes delectable with all alcoholic beverages, especially beer.
The construction of the Wildwood Dam on Trout Creek, upstream of the Town of
St. Marys, was completed in 1965 and is celebrating it’s 50th anniversary in 2015. The Wildwood cheese is smeared with wine yeast crafting a rustic look that resembles the
wild Trout Creek. With the dam’s 50th anniversary, it seemed fitting to be the right name
for this cheese.
The natural cheese ripening process combined with the positive effects of wine yeast, gives this cheese an extremely distinct taste, aroma, and flavour. It tastes absolutely exceptional on rustic bread, a cheese platter with fruits or in grilled cheese sandwiches. Due to the properties of this cheese, it pairs best with a smooth red wine.
The old railway bridge of the former Grand Trunk Railway in St. Marys is a historic landmark. Our Grand Trunk cheese has the longest ripening time and an almost historic look. Therefore, the name Grand Trunk seemed to work perfectly.
The age of consumption various from a more mild cheese with a 3-month ripening process, compared to a stronger cheese with tons of flavour, which typically takes up to 6-9 months. Grand Trunk tastes great on a slice of rustic bread, on a cheese platter with fruits, in a sandwich or just simply melted. Due to the unique flavour of this cheese, it pairs well with both red and white wines.
